Our signature interactive setup. You choose your top 3 fillings for your event, and we serve them up fresh on warm, soft corn tortillas. Every taco is supercharged with our signature, gut-friendly ferments and fresh garnishes.

Elotes – Mexican Grilled Corn
Grilled Mexican corn on the cob, bursting with flavour and topped with creamy and salty Quesso Blanco sauce, zesty lime butter and Tajin and Coriander that will leave your taste buds dancing.
Elotes can be served as full cobs, or as corn ribs to your preference.

Mexican Salads
Mexican salads are a far cry from a bowl of limp lettuce—they are all about texture, acidity, and heat. They’re designed to cut through the richness of corn and beans, acting more like a “flavour-bomb” accompaniment than a side dish.
- Ensalada de Nopales (Cactus Salad)
- Made from tender cactus pads (spines removed, obviously!), it has a texture somewhere between a green bean and a bell pepper. It’s naturally slightly tart and citrusy. We toss it with red onion, coriander, and lime.
It’s incredibly refreshing and adds a bright green note that pairs perfectly with the earthy, savoury black beans in your tacos.

- Esquites (Street Corn Salad)
- Roasted corn kernels sautéed with aromatics like garlic and epazote (a traditional Mexican herb). It’s smoky, sweet, and creamy. It’s usually finished with a squeeze of lime, a dusting of chili powder, and a crumble of salty cheese.
In a festival/wedding setting, it’s much “cleaner” to eat than corn on the cob. It stays warm well and allows guests to scoop up exactly as much as they want.
